Pork ribs with Asian BBQ sauce
Pork ribs, like all cuts of meat from this wonderful animal , are one of my weaknesses. I recently prepared some baked ones with an improvised Asian BBQ sauce that were a hit.
The preparation of this dish requires hours, but in the end the result is incredible. The meat is super soft. Precisely the idea is that it is so soft that it easily detaches from the bone.
The Asian barbecue sauce occurred to me improvising, it is different from the traditional barbecue sauce.
I decided to use a sauce of sweet soy that I have as part of the ingredients, but it is not strictly necessary. You can replace it with traditional soy sauce mixed with honey.
Ribs with Asian BBQ sauce
Ingredients (2 people)
(For the pork):
- Half a kilo of chopped pork ribs
- Curry powder
- Ground cumin
(For the BBQ):
- Half medium onion
- 2 small garlic cloves
- 1 teaspoon chopped fresh ginger
- 1/4 cup of sweet soy sauce (or soy mixture with honey)
- 1/2 cup of ketchup tomato sauce
- 3 tablespoons of vinegar
- 1 tablespoon of Dijon mustard (old mustard)
- 1/2 of a cup of water
- 1/2 teaspoon of cayenne pepper
The preparation went like this:
After washing the ribs a little of pork, I adobe them with salt, cumin ground and a little curry powder. I put them in the oven covered with aluminum foil in a tray with a grid.
There I let them cook over low heat (no more than 150 ° C/300 ° F) for 2 hours ... yes 2 hours. When the first hour has passed, remove them and turn them over. Return them to the oven.
While they cook slowly, you can make the BBQ sauce:
Fry the onion, ginger and garlic cloves with 1 tablespoon of butter over medium heat.
Add all the other ingredients of the sauce: soy, water, vinegar, ketchup, mustard, cayenne pepper, a pinch of salt and a pinch of sugar.
Cook all this mixture over low heat for 15-20 minutes (testing and correcting any ingredients that consider). Remove from heat and let stand.
When they have passed about 1 hour and 45 minutes of cooking the pork ribs in the oven, remove them, remove the aluminum foil and wet them one by one with a brush with the BBQ sauce. Return them to the oven, this time without the paper and leave them for 15 minutes.
After this time remove them and serve them with a little chopped onion on top. You can add more salsa before serving or you can leave it available to each guest to use at will.
