Recipe for stewed meat Asian style

This stewed meat I made inspired by flavors and ingredients of the cooking from countries like Malaysia, Thailand and Indonesia.

Not all Asian food is sautéed or steamed. There are stews, meat, chicken, pork, with potatoes, tomato and various spices. That's what I tried to translate into this recipe.

The key ingredients: a homemade curry paste, coconut milk and malojillo, also known as "lemongrass" or "lemon grass".

The technique: seal the meat and let it cook for 1 hour in a broth of meat and coconut milk until it dries almost completely.

The result is a soft stewed meat

strong, very aromatic with a touch of creaminess in the sauce.

Ingredients

  • 1 kg of minced beef cubes
  • 1 medium onion
  • 3 medium potatoes
  • 1 piece of ginger of about 2 cm
  • 2 tomatoes without skin crushed
  • 1 lemon grass stem (malojillo, lemongrass)
  • 2 cloves of garlic
  • 3 small hot chili peppers
  • 1 can of coconut milk (400 ml approx.)
  • 1 cup of beef broth (if you do not have, use water)
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon seeds cilantro
  • Several sprigs of fresh coriander
  • Salt and pepper

Preparation

In a food processor mixes until the onion, garlic, ginger, lemongrass, hot pepper, paprika, curry powder, cumin, coriander seeds, some fresh coriander stems, and a pinch of salt turn into a paste. and pepper. Reserve.

Heat a deep pot, add a squirt olive oil and seal the beef. This process will not take more than 3 minutes.

Once sealed, add the curry paste that you had previously prepared, stir a little and add the crushed tomatoes and half a cup of meat broth (or water) . Stir and boil for a while.

The idea here is to let this stew dries a little (without overdoing it and that is going to burn us). When this happens, add ¾ of the can of coconut milk and the potatoes previously peeled and chopped into pieces. If you see that there is a lack of liquid, add more water (or broth), lower the heat and let cook for 45 minutes to 1 hour.

Leave the pot half-covered. Here I must clarify that in each kitchen the temperatures are different, so you must be careful with the preparation times.

You should be careful that the liquid dries but does not burn. At the end of cooking this stewed meat should look like the photo below.

Remove from the fire and serve. You can add some chopped cilantro leaves on top of this delicious stewed meat.
