Carrot Cream Recipe
- 400 grams of carrots (approximately 5 or 6 medium carrots)
- 2 medium sweet potatoes
- 4 cups of vegetable broth
- 1 tablespoon of curry powder

In a pot you put 6 cups of water with 2 large onions whole, 1 small piece of pumpkin, 1 branch of celery, 1 leek and a few sprigs of fresh cilantro. Boil for 30 minutes, strain and you're done, you have your vegetable broth.
Now yes, the recipe for carrot cream:
a pan with a couple of tablespoons of olive oil stir fry the carrots previously peeled and chopped on wheels for 5 minutes. Add the curry powder and stir a couple of minutes more, with this you will make the curry "activate".
Then you will put 4 cups of vegetable broth, the sweet potato peeled and chopped on wheels (or cubes, as you like), salt and pepper.
Let boil for about 30 minutes or until the carrot and sweet potato are soft.
Place everything in a blender and mix well until there is a uniform cream.
Serve the carrot cream decorating it with a little Parmesan cheese on top or with croutons.
